Prepare the Quinoa:

•Rinse 1 cup of quinoa under cold water.

•In a pot, combine the quinoa with 2 cups of water and a pinch of salt.

•Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed.

•Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

2.Chop the Vegetables:

•Dice 1 cucumber, 1 red bell pepper, and 1/2 red onion.

•Halve 1 cup of cherry tomatoes.

•Chop a handful of fresh parsley and fresh mint leaves.

3.Prepare the Dressing:

•In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 minced garlic clove, salt, and pepper to taste.

•Add a pinch of dried oregano for extra Mediterranean flavor.

4.Assemble the Salad:

•In a large bowl, combine the cooked quinoa, chopped vegetables, and fresh herbs.

•Pour the dressing over the salad and toss to coat evenly.

5.Add Optional Ingredients (if desired):

•Crumble 1/2 cup of feta cheese over the salad.

•Sprinkle with toasted pine nuts or slivered almonds for extra crunch.

6.Serve:

•Taste and adjust seasoning if necessary.

•Serve chilled or at room temperature.
